Protein-Rich Breakfast Brownie Recipe for a Wholesome Morning Meal
Mar 20, 2024Brownies for breakfast! I've been slightly obsessed with these lately . Love having my breakfast made ahead of time.I had my blender in hand, all the ingredients laid out, and a whole lot of enthusiasm to kick off my Sunday morning with a sweet treat.
These brownies are packed with protein and fiber, making them a wholesome and satisfying way to start your day. Unlike store-bought protein bars with questionable ingredients, these brownies are made from scratch using simple, nourishing ingredients that you probably already have in your kitchen.
So, what goes into these breakfast brownies? Well, you'll need a blender, an eight by eight pan (or a round pan if that's what you have), and parchment paper to make your life easier.
The main ingredients include bananas, black beans, eggs, cocoa powder, chocolate chunks, and cottage cheese (but that's optional if you're dairy-free). Trust me, this combination creates brownies with a delightful texture and rich flavor.
I started off by blending bananas, black beans, and eggs in my high-powered blender. I also added baking powder, vanilla, stevia for sweetness, and a generous amount of cocoa. I have to admit, I'm not the best when it comes to measuring ingredients, but this recipe has been pretty foolproof for me. Once the batter was ready, I poured it into the prepared pan and sprinkled chocolate chunks on top for an extra indulgent touch.
After preheating the oven to 350 degrees, I popped the pan in and let the brownies bake for 30 minutes. The kitchen was soon filled with the irresistible aroma of chocolate and anticipation grew as I waited for them to be ready. Once out of the oven, I let the brownies cool before cutting into them. They puffed up beautifully while baking and, as expected, they deflated slightly as they cooled down.
Let me tell you, these breakfast brownies were a hit! They were moist, rich, and oh-so-satisfying. I enjoyed a piece with a cup of coffee, and it was the perfect way to start my day. I'll definitely be making these again, and I encourage you to give them a try, too.
Preheat in oven at 350F.
Put all of the ingredients in a high powered blender.
Pour into parchment paper lined 8X 8 pan.
Bake for 30 minutes or until middle is no longer "wet" looking.
Store in fridge for up to 4 days.

¾ cup canned black beans, drained,
rinsed
½ cup unsweetened cocoa powder
2 tsp. pure vanilla extract, divided use
1½ tsp. baking powder
1⁄3 cup semisweet chocolate chips
¾ cup cottage cheese
Stevia (optional)
